Loads of riders struggle with gels, bars and blocks and that’s because real food always trumps packaged. These vegan, gluten free energy bars are made with 100% natural ingredients. They’re quick and easy to make and store really well, you can even freeze them. Give this batch a go and not only will your body feel better, you’ll perform better.
Ingredients
Makes 10 bars, each weighing roughly 50g
- 100g oats
- 50g flour*
- 1 ripe banana
- 100g raisins
- 50ml apple juice
- 50g golden syrup
- 50g coconut oil
- 20g ground almonds
- 1 teaspoon cinnamon
- Pinch of salt
Method
Preheat the oven to 150 degrees Celsius.
In a pan, gently heat the coconut oil until it melts.
In a blender, puree the raisins, banana, coconut oil, syrup and apple juice.
In a bowl, mix all of the ingredients together.
Line a small tin with baking paper (a square tin approx. 15x20cm works well or otherwise an oven proof plate will do the trick). Spread out the mixture to form a layer roughly 1cm thick.
Bake in the oven on a middle shelf for 1 hour until golden brown and crispy around the edge.
Allow to cool then slice into strips. Store in a tin or freeze for up to 3 months.
Tips
- *Any type of flour will work in this recipe. Rice flour will give you the highest energy content.
- Try swapping some of the almonds for a mixture of your favorite seeds e.g. sunflower, pumpkin, flax seed – that’ll up the mineral content.
- For a great texture, use rolled oats – just whizz them up for a few seconds in the blender.
- Save time by making a mega batch of these energy bars. Just whip one out of the freezer and you’re ready to ride!
